About this Talk
Today’s food system not only contributes to global crises – the climate emergency, food insecurity, biodiversity loss, and deforestation – it also threatens our health. The more we consume, the sicker we and the planet become. While governments and policy makers can create solutions at a structural level, individuals can take concrete action for the planet and for personal health with their daily meals. What ingredients should we choose? How should we cook? How should we dispose of waste? And how should we eat? This talk will provide a practical guide to realizing ecological values through food.
About Dr. Hyunjoo Lee
Hyunjoo Lee is a Doctor of Oriental Medicine Pharmacy, a chef, author, and most recently, the founder of Bowen Lifestyle Medicine Centre. Since 2004, she has been operating the only Oriental Medicine Pharmacy in Korea that prescribes pure plant-based medicines. Hyunjoo became a vegetarian in 2003, and in 2010 founded ‘Meat Free Monday Korea’, an organization that aims to address the climate crisis by eating vegetarian meals one day a week.
Her work treating illnesses with Oriental medicine and vegan diets led her to the realization that her patients needed to fix their lifestyles. Accordingly, in 2012, she developed the ‘Five Senses Therapy Program” and opened the School of Five Senses Therapy. Dr. Lee has completed the Lifestyle Medicine program at Harvard Medical School and the Plant-Based Nutrition course at Cornell University and is certified as an International Lifestyle Medicine Professional.
Hyunjoo combines her approach to plant-based nutrition, founded on scientific data, with her clinical experience of 20 years healing various diseases using the concept that food is medicine. She is currently a Special Advisor to the EAT Foundation and is a highly sought-after lecturer internationally. She has authored eight books, including Magic Spoon, Vegan Practice, Intermittent Vegan, and Delicious Vegetarian Happy Recipes.
